Firkin ales, also known as “real ales” or “cask-conditioned ales,” undergo a secondary fermentation right inside the cask, leading to natural carbonation. Unlike modern brewing methods, which add carbonation later, the firkin process creates a softer, more complex beer. It’s similar to bottle conditioning in homebrewing, but on a bigger scale.
Historically, firkins were made from wood, typically oak, but today they’re crafted from steel, just like the standard kegs you see in breweries. However, the magic of the firkin lies not just in the materials, but in the flavors it unlocks.

The Inspiration Behind Firkin Fest
For Chris Meadows, our Head of Brewery Operations, the firkin holds a special place in his brewing journey. His first exposure to cask-conditioned ale came while working the packaging line at SweetWater Brewing Company in Atlanta. He recalls:
“I worked on the line and ran a machine called a depalletizer, which took large amounts of empty glass bottles off a pallet and loaded them onto a conveyor. I was just getting into the beer world, brewing at home with extract kits and eventually all-grain batches.”
During this time, SweetWater hosted a weekly “Cask Night,” where they tapped a new firkin every Wednesday in the tasting room. It was here that Chris fell in love with the tradition and creativity of firkin ales:
“It was a unique way to serve beer to a lot of people at once. I was hooked on the idea immediately.”
Chris’s passion for cask ale didn’t stop there. He bought his own firkin and started bringing it to his DJ gigs around Atlanta. Whether he was playing at bars, warehouse parties, or even parks, Chris found that serving his homebrewed cask ale was an awesome way to test his recipes.
“It was an awesome way to learn about my recipes as I got immediate feedback. Even if my beer wasn’t perfect, it was clear that everyone at the party loved free beer.”
After honing his brewing skills and working his way up to the brewery floor, Chris and the SweetWater team started their own firkin-centered event called “Brew Your Cask Off,” where firkins took the main stage.
“It was a riot of a time each year,” Chris fondly remembers.
Now, years later at Peaceful Side Brewery, Chris still owns that very same firkin and continues his love of cask-conditioned ales. When the idea of hosting a beer festival came up, it was obvious they needed something special to make it stand out. That’s when Chris decided to bring firkins back into the spotlight with our very first Firkin Fest.




What Makes Firkin Fest Special?
On Saturday, November 9th, Peaceful Side Brewery will be transformed into firkin heaven, featuring twelve different breweries—each bringing their own specially made cask for this one-time event. Our very own brew team will also be contributing two unique firkin creations, bringing the total to fourteen exclusive beers. These are beers you won’t find anywhere else, crafted just for Firkin Fest.
Chris explains:
“I’ve developed quite a few relationships with brewers from all over. I reached out to them and asked, ‘Do you have a firkin? Do you want a place to use it?’ That sparked a lot of excitement in the brewing community.”
Firkin Fest will be an opportunity for beer lovers to experience the creativity and craftsmanship that goes into making cask ales. The naturally carbonated, unfiltered beers will offer layers of flavor you won’t find in standard drafts.
