We’ve got some exciting news bubbling up at the brewery! We recently teamed up with our good friends at Xül Brewing Company to craft a collaboration that perfectly captures the spirit of both our places: The Good, the Bad, and the CrispyWest Coast Pilsner.

This isn’t just a beer; it’s the second chapter in our HOME/AWAY series—a high-five between the mountains and the metropolis. As our H.O.B.O. (Head of Brewery Operations), Chris Meadows, puts it:

Frontier Showdown: The Malts and Hops

Brewed in the spirit of craft camaraderie with a nod to the rugged charm of the Old West, this beer asks you to forget everything you thought you knew about light lagers—this one’s got some teeth.

The Foundation

Built on a trio of premium malts—Weyermann Barke, Malteurop, and a custom Tennessee-grown Pilsner from Carolina Malt House—this beer lays down a clean, honey-kissed base with subtle notes of grain and straw. A touch of regional 2-row barley adds depth and a sense of place, like a saddle-worn map guiding the way.

The Hop Power Play

  • Bitterness: First-wort Columbus brings an assertive, clean bitterness.
  • Kettle & Whirlpool: Erebus and Chinook ride in late with candied fruit and floral spice, while additions of Zeus Salvo from Hopsteiner steer the flavor toward pungent resin.
  • Dry-Hop Standoff: An aggressive dry hop of Citra, Mosaic, and Alora Lupulin delivers bursts of pomelo, mango, melon, apricot, and fresh cracked black pepper.

The Pour, The Profile, The Pride

This outlaw pours pale gold with brilliant clarity and a tight white head. Aromas of grapefruit zest, tropical fruit, and pine needles lead into a crisp malt backbone. Light-bodied and effervescent, the finish is bone-dry with refreshing bitterness and a lingering hop twang.

The West Coast Pilsner is a modern hybrid style that bridges the drinkability of a traditional German Pilsner with the bold hop character of a West Coast IPA, leaning into clarity, bitterness, and intense aroma.
